Today I leave you the recipe for a sort of experiment: I put together several recipes in circulation (on the web and otherwise) of strudel, sweet typical winter, which brings me back to the memory of those delightful Christmas markets in Trentino Alto -Adige, surely getting a positive outcome. I opted for a mixture with ricotta cheese and a filling with apples, rather than to tradition. The fact is that I was really undecided ... or not a foodblogger?

Ingredients

for the dough: 100 g flour 00


85 g sugar 100 g butter 75 g ricotta

a teaspoon of baking powder


a teaspoon of vanilla extract for the filling: 3 apples

3 heaping tablespoons of bread crumbs
zest of one lemon and juice of half a pinch of cinnamon


to brush: 30 g butter


procedure

for the dough:
Change to the mixer the flour, sugar and butter. Also add cottage cheese, baking powder and vanilla. Blend until creamy and smooth, forming a ball (if is too soft, stir in a bit 'of flour), cover with plastic wrap and refrigerate for at least an hour before bedtime.

for the filling: Place the raisins in
soaked in a cup of warm water. Meanwhile, peel and cut apples into pieces not too thin, then sprinkle with lemon juice. Sauté the breadcrumbs on the heat with a knob of butter (about 2 minutes), add the lemon zest, cinnamon and sugar. Stir and add the apples and raisins wrung out.

Roll out the dough, which must be thin on a sheet of floured waxed paper. Arrange evenly over the filling, then, taking care not to break the dough, wrap it carefully, until you get a "roll" to brush with melted butter, place on baking sheet covered after baking paper. Bake at 180 degrees for 40-45 minutes. Wait until it becomes lukewarm, then sprinkle with powdered sugar and serve.
